Chili Relleno and Peach Cobbler Paleo style!

Well, today I tried a couple of Paleo dishes that I just loved. So I thought I would share. After Crossfit this morning I stopped by the local produce stand and picked up some peaches and some different kinds of peppers. It seems that if I use spices on my food that it makes a huge difference in keeping me happy on Paleo. I love Mexican food but without cheese and sour cream I feel a little deprived. But not today!

Chili Relleno
1/2 chopped Poblano chili pepper
1/4 onion, chopped
Saute in coconut oil.
Add 2 eggs and scramble.
(add grated cheese unless you are eliminating dairy)

Top with chopped tomato, cilantro and avacado.

Then I just had to try a recipe that a gal at MV Crossfit shared with me

Peach Cobbler
Chop up one peach
Sprinkle with Cinnamon
Top with chopped nuts

Microwave for 2 minutes!
I topped mine with a little coconut milk.
